April has flown by but we've had some lovely, sunny weather here in the UK in a month which is normally dominated by showers. There are gorgeous blue skies and sunshine whilst I write this blog...
Henry starts his GCSE exams next week and it's crazy that he's almost finished his secondary schooling. It seems only a short while ago we were standing at the gates waving him off for his first day of year 7. He hopes to stay on at his school for his 'A' levels but has to get certain minimum marks to do so. Right now he has no idea what he wants to do for a career, but at 15 (nearly 16) years old it's really difficult - I still don't even know what I want to do 😂!

I've just returned from 5 days holiday with my mum near Malaga in Spain but hopefully you were still happy with content whilst I was away? It's my Birthday at the end of April and hers at the start of May so we try to go away every year, just us two. I tried to create enough recipes in advance for YouTube (on top of writing the new book) so that the recipe videos keep flowing. The beauty of the internet is that I can regularly check and reply to your questions or comments via the website, on YouTube or the Facebook Group. We had a great time there; we saw dolphins in the sea not far off the coast, ate lots of delicious food including an amazing Spanish paella, and I was well catered for with plenty of gluten-free options wherever we went.

On my Birthday we went out for lunch at a local pub/restaurant nearby which is owned by 2 Michelin Star brothers. Funnily enough, we don't go out to eat very often so it was a nice treat eating outside on the terrace on a sunny day there. We also took a trip to the garden centre (rock n roll !) to pick some plants for the garden, some herbs and vegetable seeds. I'm not going mad this year - just going to grow some carrots, peas, spring onions, lettuce & tomatoes and a few herbs I use often which I can pick easily rather than buy. This all saves a few pennies compared to buying from supermarkets as the cost of food is so expensive these days isn't it ?
